Recipe for Smoked Chicken Wings

Ingredients:
- 1 gal. Canola Oil
- 1.5 qts onion, diced
- 2 cups Peanuts
- 1 qts toasted garlic
- 2 cups raw white sesame seeds toasted
- 6 qts Guajillo chile, stemmed
- 10 ea Pasilla Oaxaca, stemmed
- 1.5 qts Arbol chile, stemmed
- 4 ea El Milagro tostadas
- 1.5 cup Chicken base, Knorr
- 1 Tbsp Cumin, ground
- 1 Tbsp Mexican oregano, dried
- 1 tsp Clove, ground


Cooking Instructions

Step 1: Begin by marinating the chicken wings in a Standard Chicken Brine for 4 hours.
Step 2: Coat the brined chicken wings in Achiote Marinade and smoke them until reaching an internal temperature of 165°F.
