Rey Galindo (left) and his nephew Jorge Sierra are currently engrossed in the renovation process of the former Balaton restaurant located in Shaker Square. The new establishment, Coyoacán Taqueria & Brew, is set to open its doors in the month of October. Partners Antonio Mendez, Francisco Lujano, and José Luis Martínez also play a pivotal role in this exciting venture within the culinary industry.


Bringing Culture and Cuisine Together

Rey Galindo, an experienced restaurateur and investment advisor, is introducing a fresh brewpub experience to the vibrant locale of Shaker Square in the upcoming months. The establishment, named after his family’s hometown near Mexico City, will be housed in the space formerly occupied by Balaton restaurant, solidifying its place as a cornerstone in the northwest quadrant of the historic plaza.


A Taste of Authenticity

With deep roots in the Aztec language, the name 'Coyoacán' translates to 'place of coyotes.' Galindo and his team are diligently working on revamping the main dining areas, which will feature an eclectic mix of traditional fare and contemporary brews. Crystal chandeliers from the previous tenant add a touch of elegance to the casual yet sophisticated ambiance, while the decor pays homage to renowned artist Frida Kahlo's Coyoacán residence.


Culinary Delights Await

The dining experience at Coyoacán will be unique, with a service model reminiscent of popular chains like Chipotle. Offering a delectable array of Mexican delights such as tacos, tortas, and empanadas, the cozy space will accommodate over 30 patrons across eight tables. Additionally, a dedicated microbrewery area will offer patrons a diverse selection of enchiladas and chili rellenos that align with the culinary calendar of Coyoacán itself.


A Legacy Reborn

The Galindo family holds a rich history in the local restaurant scene, with Rey Galindo's mother, Maria de la Luz “Luchita” Galindo, paving the way with Luchita's Mexican Restaurant. Rey's culinary journey traces back to his time as the head chef at Luchita's, and now, with Coyoacán Taqueria & Brew, he aims to revive that legacy. The Shaker Square location is just the beginning, as plans are underway to expand the Coyoacán brand across Northeast Ohio and Raleigh, North Carolina, in the near future.
