Celebrated Chef Bids Farewell to Las Vegas, Embarks on Farm-to-Table Venture in California Wine Country

Ellamar will be taking over as the executive chef at a new rooftop restaurant at Graton Resort & Casino, where he will also oversee a 12-acre farm providing fresh produce for the establishment.

Leaving behind his successful ventures in Las Vegas, including Fine Company and Harvest by Roy Ellamar, the chef is excited to embrace new challenges in the lush surroundings of northern California. His seasonal approach, influenced by his Hawaiian roots, will now have the opportunity to flourish with the abundance of the farm-to-table concept.
Embracing Farm-to-Table Cooking
Ellamar expressed his excitement about the prospect of having an on-site farm, stating that it has always been a dream of his to champion produce and showcase the best of the product. The farm will play a crucial role in dictating the menu, with a focus on live fire cooking and a top-notch wine program to complement the dishes.

Before his departure, Ellamar is teaming up with Amari Italian Kitchen & Wine Shop to present Pamilya x Famiglia, a unique Filipino-Italian menu fusion. Dishes such as okoy sweet potato fritters and mafaldine pasta palabok will be served family-style, offering a taste of the chef's diverse culinary influences.
